Thursday's Recipe Swap Meet ~ Banana Bread

OK... we know you have all these recipes that you love to make. You got them from your mother, your grandmother, a magazine, or maybe you made it up, perhaps you don't even remember where the recipe came from. Well, how about sharing them with all of us? We are going to share ours with you every Thursday!



My good friend and (according to her husband) excellent cook, Dolly over at XmasDolly and I are now doing a recipe swap; we want to share ours with you and wold LOVE to get some of your favorites as well... So, Welcome to Thursday's Recipe Swap Meet, here is all you have to do:

Post a recipe on your blog, sign the linky on either blog (they will be linked), grab our new button - isn't she cute - hubby says she looks like me... TeeHee? (above, on my sidebar and on my Co-Chef Dolly's blog) and check out the recipes. Don't forget that each week you actually will be getting at least TWO for the price of ONE because both Dolly and I will post a recipe on each of our blogs. How simple is that??


A couple of weeks a go we got 3 pounds of bananas from BJ's for a great price, but we couldn't eat them all before they got too ripe, so I decided to make a couple of loaves of banana bread. I made one with chocolate chips that I gave to our super sweet neighbor, and one without we kept and ate ourselves.


Banana Bread


3 1/2 C all-purpose flour
1 1/3 C brown sugar
4 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 C mashed ripe banana (4-5 medium bananas)
2/3 C butter (can also use shortening or margarine if desired, but doesn't taste as good)
4 Tbls milk
1/2 tsp. vanilla
1/2 tsp. Buttery Sweet Dough Flavor (optional, but adds a wonderful flavor)
4 large eggs
1/4 C chocolate chips per loaf (optional)
Crystal sugar (optional- I get mine from King Arthur Flour Company)

~ Preheat oven to 350 degrees F; grease two 8x4x2" loaf pans (I only use Pam spray)
~ In large mixing bowl combine 2 cups flour , brown sugar, baking powder, baking soda, and salt; Add mashed banana, butter and milk. Beat at low speed until blended then at high speed for about 2 minutes.
~ Add eggs (one at a time) and remaining flour (careful, it spits up at you); beat until blended. You can stir in your chips now if using or if you are like me and are only making one with chips, wait until you have poured one into a prepared pan. Then let your little friends share the beater with you.
~ Pour into prepared pans sprinkle top with the crystal sugar and bake for 50-60 minutes. Top will be slightly golden and toothpick inserted into center will come out clean. Cool in pan for 10 min. than remove and cool completely before slicing If you can't wait like me... it will crumble. Wrap in foil to keep moist. =)



Again to my surprise this received 6 out of 6 puppy tail wags because NONE of the dogs will eat plain bananas, but they love the bread, with or without butter... they are weird, but then again they are my dogs.

Okay, so where's the cold glass of milk, and I'll have mine fresh out of the oven please with a little bit of butter, but in all reality I love mine toasted. Did you ever have it that way? NUMMERS!!!!! Okay, I'm off to vote for you if I can figure it out.

I love banana bread. My crust never looks as pretty as your does though. Is there a trick?
