Thursday's Recipe Swap Meet ~ Pink Champagne Cupcakes

.


OK... we know you have all these recipes that you love to make. You got them from your mother, your grandmother, a magazine, or maybe you made it up, perhaps you don't even remember where the recipe came from. Well, how about sharing them with all of us? We are going to share ours with you every Thursday!




My good friend and (according to her husband) excellent cook, Dolly over at XmasDolly and I are now doing a recipe swap; we want to share ours with you and wold LOVE to get some of your favorites as well... So, Welcome to Thursday's Recipe Swap Meet, here is all you have to do:

Post a recipe on your blog, sign the linky on either blog (they will be linked), grab our new button - isn't she cute - hubby says she looks like me... TeeHee? (above, on my sidebar and on my Co-Chef Dolly's blog) and check out the recipes. Don't forget that each week you actually will be getting at least TWO for the price of ONE because both Dolly and I will post a recipe on each of our blogs. How simple is that??


 
Pink Champagne Cupcakes
 
Cupcakes:
1 box white cake mix (you can make scratch, but I just use box mix for this recipe)
1 1/4 cups champagneat room temperature (use a sweet, cheap sparkling wine - don't waste the good stuff)
1/3 cup vegetable oil
3 egg whites
4 to 5 drops red food coloring


Frosting:
1/2 cup butter, softened
4 cups powdered sugar
1/4 cup champagne at room temperature (again, use a sweet, cheap one)
1 tsp. vanilla (I only use Mexican pure vanilla)
4 to 5 drops red food coloring


~ Preheat oven to 350°F (325°F for dark or nonstick pan). Place paper baking cup in each of 24 regular-size muffin cups.
~ In large bowl, combine dry cake mix and room temp. champagne. Add oil, eggs and food color. Beat with electric mixer on medium speed for 2 minutes. Divide batter evenly into paper-lined muffin cups.
~ Bake 17 to 22 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan to cooling rack. Cool completely before frosting (at least 30 minutes).
 
To Make Frosting:
~ In medium bowl, beat ingredients with electric mixer on medium speed until smooth.
~ Frost cupcakes. Decorate with pink sugar and/or sprinkles, edible pink pearls.

The champagne make these SO light and fluffy and give the frosting a delicious flavor.... it received 6 out of 6 puppy tail wags because my dogs are very strange. =)  I like to frost with my Pampered Chef Easy Accent Decorator to make them look purdy - but of course I don't have a photo of these because I haven't made them in a while, it's just too hot.

Wordless Wednesday: July 27, 2011 ~ All Six of My Babies

One night last week, right before bedtime, all the babies were in such a good mood and they were all on the bed looking so cute, I decided to do an impromptu photo shoot. Here are a couple of the best shots.....






Aren't they just adorable? Do you know how difficult it is to get six doggies to look the same way at the same time ~ almost impossible. HaHa!

How's the Weather Where You Are?

I can't believe that 2/3 of the country is actually HOTTER than the weather we have here in Florida.

I hope you are all able to keep cool while still managing to have some fun this summer.

I'm spending lots of time in the air conditioned house with the doggies and then head to the pool usually once a day to swim and do some exercising.

Don't forget to drink plenty of water, take breaks while you are outside and WEAR YOUR SUNSCREEN.  This has been a public service announcement from your loving friend, Lorie. =)

Here is my submission for the week, this butterfly was sitting on the flowers outside the front of my house. I was able to capture this photo during one of my rare moments alone without any puppies jumping all over me or any of the little critters in the area. =)

Happy Birthday Sue - I Miss You So Much!

Today would have been my best friend in the whole world's birthday, but she passed away in 2009 and I miss her more than words can say. She was always there for me when I needed her and vice-verse. She was the maid-of-honor in my wedding to Bill and I was the maid-of-honor in her wedding.

As a tribute to Sue, I'd like to rerun a post I wrote shortly after she died:

Have you ever had a friend that you knew would always be there when you needed her no matter what? Well I have... Let me tell you about my best friend Sue.....

Sue and I have been best friends for 30 years!! I used to babysit her little kids when I was in my late teens. Sue got married the first time when she was WAY too young and then got divorced young from an abusive husband. I envied her strength in her ability to do that. She has always amazed me in her ability to pick herself up and carry on, despite the horrible things thrown at her.

She then met her second husband and had two more children and I got married and had two children. We were always there for each other, like during the births of each others' children,usually the first ones there after the babies were born (sometimes before the rest of the family) and the first one there if there was a question or when something exciting happened.

Then whenever there was a problem, all there had to be was a phone call, there didn't even have to be more than the voice of the other one saying ones name. She would say, "Lorie" or I would say, "Sue." The next words out of the other persons mouth would be, "I'll be right there!" And we would, for as long as was needed. We were there for each other's divorce, which were actually within 6 months of each others -- funny how that works, but we were in it together and we survived together.

Now it was her kids' turn to babysit my kids, so I could get back on my feet, again, with Sue's help, and learn to love again. Mend my destroyed heart and soul... and I did. I found Bill and Sue was right there to stand beside me as Bill and I exchanged vows and pledged to be man and wife. I was there standing beside Sue as she and Dennis did the same (unfortunately she wasn't as lucky with Dennis as I was with Bill). I was there, though, with the promise to smack her up side the head if she EVER decided to get married again!!

When I moved to Florida, Sue was there on that last day as I packed up my house and drove out of the driveway -- both of us with tears in our eyes. We continued to call, write, send cards and emails. It didn't happen as much as it should have, but we always were in touch. I was there when her mom died, and she called me immediately when my dad passed. Every birthday, hers in July and mine in December, we passed along our "Friendship Ball", a sterling silver ornament that has a hinge that we would wrap up in this little blue bag - that was falling apart, being held together by tape - that we had put inside a small trinket of our friendship. The important part was the ball, which would be hung up in a special place of honor in our house during the 6 months while in our possession. It was a wonderful thing we shared.

Then 3 months ago, the unthinkable happened.... I got a phone call from Sue's middle daughter, Kim. I knew that couldn't be good! Sue was in the hospital.... not doing well at all, she had been hiding her sickness from me, I had just gotten a card from her in March for my wedding anniversary with no word that she wasn't feeling well (WTF). She had kidney cancer that had traveled to her lungs (already had TWO courses of chemo - never told me!!) and it had now metastasized and she was in heart failure..... OH GOD..... they weren't giving her much time...... OH NO, I can't handle this..... she probably doesn't have more than a few days, maybe a week..... I'm beginning to hyperventilate...... She just wanted me to know that she loves me and always will........

O.K..... now I have to stay calm and let Kim know that it is alright, I'm alright, and I love them all -- they are my family. But, there is no way that I can make it up to Connecticut, I've had spinal surgery 6 weeks ago and cannot fly. Now, I feel even worse..... my best friend is dying and I cannot get to see her before it happens and wont make it to the funeral. Kim assures me that they all understand and that she will let Sue know how I feel and tell her that I love her (when did Kim become a grown-up?). I know in my heart that she knows -- she feels it as deeply as I do, and neither one of us will ever forget everything we have been through, and all the wonderful things we have done and the fun we have shared!!

Three days later, I get another call from Kim.... I begin to cry as I am answering the phone..... I feel it before I can say "hello"..... Sue is gone, from this world, but NEVER from my heart!!!

Today is Sue's birthday..... So Sue..... Happy Birthday.... I love you and I miss you, and I will never forget you!!!

I hope you are all bless with that kind of friendship in your lives. It is something that is rare and wonderful and I will never regret one moment of it.

Double Chocolate Bread Pudding with Dulce de Leche

Dulce de leche:



2 14-oz. cans sweetened condensed milk (I only use Eagle Brand)


Pudding:


1-lb. day-old loaf French bread, cut into 1-inch cubes
8 ounces dark chocolate or semisweet chocolate (the darker the better for me)
1 cup packed brown sugar
1/2 cup sugar
1/2 cup unsweetened cocoa (I also use a really dark cocoa called Black Cocoa, mmmm)
1/4 tsp. salt
2 cups whole milk
1 1/2 cups half-and-half
6 large eggs, beaten
1 tsp. instant espresso powder (my favorite comes from King Arthur Flour Company)
1 Tbls. vanilla extract


~ Make dulce de leche: Pour condensed milk into a bowl; set over a pot of simmering water. Cook, stirring occasionally, until sauce is very thick and golden brown, about 2 1/2 hours. Add more water to pot during cooking time, if necessary. Remove bowl; set aside to cool.



Make pudding: Butter a 9-by-13-inch baking dish. Spread bread in dish; sprinkle with chocolate. In a bowl, whisk both sugars, cocoa and salt. In a separate bowl, whisk milk, half-and-half and eggs. Dissolve espresso in vanilla; whisk into egg mixture. Whisk egg mixture into bowl with cocoa mixture. Pour over bread cubes. Cover loosely; let stand for 1 hour.


~ Preheat oven to 325°F. Remove cover. Bake pudding until puffed and set in center, 50 minutes to 1 hour. Insert a small knife into center; it should come out clean. Let stand for 10 minutes. Drizzle with dulce de leche and serve with ice cream, if desired.

OK, this does take some time to make, but you don't have to stand over it while making it and it really does taste delicious. Bill LOVES bread pudding and because of the chocolate content, there are NO puppy tail wags on this one... however they all did like the caramel sauce and they do love ice cream! =)  I haven't made it in a while so I don't have a current photo of my own, I borrowed one from the recipe file.

Macaroni Salad


6-8 Hard cooked eggs, peel and chopped into bite-sized pieces
1 box (16 oz.) elbow macaroni, cooked according to pkg. directions (Barilla works best)
2 cans large ripe pitted olives cut in half
1-2 Tbls. mustard (to taste)
salt, pepper, mayonnaise (Hellmann's is the best) to taste

Mix all the ingredients together and serve chilled. Store leftovers tightly covered in refrigerator.





This received 6 out of 6 puppy tail wags, as you can see. It really amazes me what these doggies like to eat, they even bugged us while we were eating dinner so they could have more. As you can also see, Bill really loves this, too - it is one of his favorites. I love how simple it is and usually make a HUGE bowl of it so that we can have leftovers for several days and I make dinners that go well with it. Sometimes I make extra hard cooked eggs so that I can make egg salad for sandwiches for lunch or deviled eggs, which is also one of Bill's favorites.

Wordless Wednesday: July 13, 2011 ~ Final Shuttle Atlantis Launch

Welcome to Wordless Wednesday..... I'm looking forward to to seeing all of your photos, so if you leave a comment, please leave your email address so I can come on over and take a look.
I was able to take these two photos off my balcony during the final launch of the Space Shuttle Atlantis on July 8th. No matter how many times I get to see it, I still get goose bumps. The thing that truly gets me is when it returns to earth and they break the sound barrier... the whole house shakes. =)

Monday's Music Moves Me ~ Give my Regards to Broadway!

Welcome to a Monday's Music Moves Me, the fantabulistic music meme hosted by me, Dolly from XmasDolly, Larry from Cakeblast and Callie from Jamerican Spice and the wonderful Stacy from Stacy Uncorked. This week's theme is Military/Patriotic or Broadway Tunes.

Since I did patriotic tunes last week, I decided to go the Broadway route this week. Bill and I used to go to the theater all the time when we lived in Connecticut, we had a local theater that showed Broadway Musicals and we went to at least 6 a year, but we haven't gone to any since we moved down to Florida, I really miss them. Here are some of my favorites.

These next two songs are from my absolute FAVORITE musical... I have seen it three times, once actually on Broadway. I still get chills when I see it or hear the music and my favorite singers are portrayed below.....
