Friday Food Fight ~ Cinnamon Swirl Bread

I made a cinnamon swirl bread the other day and it was SO delicious, Bill and I ate the whole thing in 3 days - we did have to share a little with the puppies. =)



I will be adding the recipe to my Thursday's Recipe Swap Meet on June 30th and wait until you see the inside....mmmmm! Hope you can join us with one of your favorite recipes.

Thursday Recipe Swap Meet ~ Pineapple Upside-Down Cake

OK... we know you have all these recipes that you love to make. You got them from your mother, your grandmother, a magazine, or maybe you made it up, perhaps you don't even remember where the recipe came from. Well, how about sharing them with all of us? We are going to share ours with you every Thursday!


My good friend and (according to her husband) excellent cook, Dolly over at XmasDolly and I are now doing a recipe swap; we want to share ours with you and wold LOVE to get some of your favorites as well... So, Welcome to Thursday's Recipe Swap Meet, here is all you have to do:

Pineapple Upside-Down Cake

Cake Ingredients:
I couldn't find my photos of the cake I
made, so I "borrowed" this one from
the internet.
1 1/3 C All-purpose flour
2/3 C brown sugar
2 tsp. baking powder
2/3 C Whole milk
1/4 C Unsalted butter, softened
1 Large egg, room temp.
1 tsp. Vanilla
1/4 tsp. Princess cake & cookie flavoring (optional)

Additional Ingredients:

2 Tbls. Unsalted butter
1/3 C Packed brown sugar
8 oz. Can Sliced pineapple, drained
Maraschino cherries, as needed for center and around pineapple rings


~ Preheat oven to 350 degrees F.
~ Melt 2 T. butter in 9 x 1 1/2" round baking (or saute pan, I have a fabulous 12" non-stick pan from Pampered Chef that I use every day to cook, fry, saute, and even bake in... it can go from the stove top to the oven up to 500 degrees, so I use this one. I LOVE this pan.); stir in 1/3 C brown sugar and 1 Tbls. water; mix until smooth and no lumps.
~ Arrange pineapples in circular pattern in pan on top of sugar mixture; add cherry to center of each pineapple ring and between rings if wanted.
~ Prepare cake batter as follows:
   ~ Combine flour, sugar, and baking powder; add milk, butter, egg, and flaorings. Beat on low speed until combined; then beat on medium speen for 1 minute.
~ Gently pour batter into pan, over pineapple and cherries, careful not to disturb arrangement.
~ Bake at 350 for 30 to 35 minutes, until toothpick inserted into center of cake comes out clean.
~ Cool on wire rack for 5 minutes then loosen sides with thin spatula and invert onto plate. (MAKE SURE PLATE IS AT LEAST an inch larger than baking dish/pan all the way around - otherwise you will have a mess - been there/done that!); Serve warm.... YUMMY!!!

This received 6 out of 6 puppy tail wags for the batter and the cake, but 0 out of 6 for the cherries and the pineapple, oh well, that's OK, Bill and I love it and it is my oldest son Nik's favorite cake I make. He requests it every year for his birthday. I even sent him one when he was at Army Basic Training, but because of all the red tape to get the mail to him, it was partially moldy by the time he got it. He said that he and his roommates ate part of it anyway and it was still good: BOYS - OMG!!

Friday Food Fight ~ Banana Bread

This is some banana bread that I made last week - I forgot to take a photo of it before we cut into it (oops!) but it still looks yummy! I actually made two cakes, one with chocolate chips that I gave to our neighbor. She is a widow that absolutely LOVES our doggie Nano and she is always giving him little treats for his birthday and for Christmas (and Nano gives her a Christmas gift).

The recipe for this bread will be on my Thursday's Recipe Swap Meet next week. How about you head on over and share your favorite recipe this week, I could really use some new ideas for dinner. =)

Thursday Recipe Swap Meet ~ Blueberry Bread Pudding

On Saturday, we went to this amazing German bakery with our good friend Lynne, Yahala Bakery and purchased some delicious pastries and bread (plus had lunch there: bratwurst with sauerkraut on an awesome roll and beer). Right next to the bakery was a fruit stand with a blueberry patch in the back where you could pick your own blueberries, SO..... that is exactly what we did:






Blueberry Bread Pudding



6-8 Slices white bread, crusts removed (I used butter bread from the German bakery)

1/2 Cup (1stick) unsalted butter, melted
3 Cups evaporated milk (you can also use buttermilk or half-and-half)
4 Large eggs
1/2 Cup granulated sugar
1 tsp. vanilla
2 Cups fresh blueberries (thawed frozen berries can be used if not in season)









Preheat oven to 350 degrees F.
Slice bread on the diagonal and brush both sides with the melted butter; put aside as you prepare the custard.






Beat together milk, eggs, sugar, and vanilla on medium speed until blended.







Pour some custard into an ungreased 2-quart baking dish and sprinkle 1/2 the blueberries over the custard.
 
 
 
 
 
 
Arrange the bread slices in dish, overlapping some on top of custard/blueberry layer, pushing down slightly to cover bread with custard.
 
 
 
 
 
Pour remaining custard over bread slices and sprinkle the rest of the blueberries on top.
Bake for 50 - 60 minutes.
Cool on a wire rack and dust with confectioners' sugar.






This recipe has a split review, the custard received 6 out of 6 puppy tail wags, but only 3 out of 6 for the blueberries. =)  Hubby loves it, bread pudding is one of his favorites - mine, too.

Hamburger Stroganoff



Ingredients

8 oz. uncooked egg noodles (I like largest size)
1 tsp. EVOO
1 lb. extra lean ground beef  (I use 10% fat)
2-3 cloves garlic minced or grated
2 Tbls. all-purpose flour
1 cup beef stock (you can also use broth if you want)
Salt & Pepper to taste
3/4 cup sour cream
2-3 Tbls. dry white wine
3 tablespoons chopped fresh parsley


~ Cook pasta according to package directions, without using any salt or butter/oil in the water; drain and rinse under cold water then drain completely.

~ Heat EVOO in a large nonstick skillet over medium-high heat, add beef until browned, stirring to crumble. Add garlic stirring frequently until garlic is clear; sprinkle with flour and cook 1 minute, stirring constantly (I use whisk to prevent lumps). Stir in broth and bring to a boil; reduce heat, and simmer 1 minute or until slightly thick. Stir in salt and pepper.

~ Remove from heat, stir in sour cream and wine. Serve over pasta. Sprinkle with parsley. (I have a parsley plant on my window sill that I am just waiting for it to grow big enough to use in my cooking. HaHa)

I forgot to take photos while I was cooking (I swear brain cells are leaking out of my ears) so I used the one above from the recipe - they use mushrooms but Bill doesn't eat mushrooms so I modified the recipe some. This recipe, because it has BEEF in it, received 6 out of 6 puppy tail wags and made enough for us to have two dinners.

Mommy and Me Monday ~ Mandie's Become a LITTLE Clingy

Welcome to another edition to Mommy and Me Monday.....

Since I don't have any little ones in my house anymore, y'all know that I post photos of my fur-babies, I have discovered that both Mai-Li and Mandie enjoy being close to me as much as posible, Mandie especially.

Turns out that If I put Mandie inside the bib of my overall shorts of jeans, Mandie will stay there almost all day. She will stay there while I am on the computer, reading, and even while I am cooking. I think she is just so happy that she has found a house filled with love and wants to give love back. We are just so happy to have her in our little household as our baby, friend to the other doggies, and my protector - you should see her take on other dogs, no matter what size they are.



Look how comfy she is... So, if you have room in your home and in your heart, please adopt a pet. You can check with your local shelters, the Humane Society, or the ASPCA.... If you don't have room in you home, I'm sure any of these organizations would truly appreciate any contribution you could give.

Today I chose a really simple dessert recipe (but forgot to take photos... DOH!!)

Blushing Apples


2 pkg. (4 serving size) cherry gelatin (I recommend Jell-O brand) - you could also use your favorite flavor
1/4 tsp. ground cinnamon
4 cups water
4 medium Granny Smith apple (you can also use McIntosh or your favorite apple)
1/2 c whipped cream (I like to make my own homemade, but you can use your favorite)


~ Combine dry gelatin mix and cinnamon in saucepan. Add water, bring to boil on medium-high heat stirring frequently until gelatin is completely dissolved.
~ Peel and core apples. Add to gelatin mixture in saucepan, PARTIALLY cover pan with lid and return to boil. Reduce heat to medium-low and simmer 10-15 minutes gently turning apples every 5 minutes. Remove apples from liquid.
~ Serve apples either warm or cold with fresh whipped cream.


This recipe only received 1 out of 6 puppy tail wags... but that's because my babies are really carnivores and Mumbo will eat just about anything. =)

Friday Food Fight: Homemade Mocha Coffee

This is a new treat I have discovered. I love having mocha coffee, but I refuse to pay those ridiculous prices at the coffee shops so I have found that if I just drop a small square of fudge in the bottom of my coffee cup before making the coffee, it adds just the right amount of chocolate and sweetness to my coffee that I am looking for without adding too many callories. Besides, I don't do it too often.  =)

Thursday's Recipe Swap Meet - Chicken Noodle Casserole

Chicken Noodle Casserole


Egg Noodles cooked according to pkg. directions
Cooked chicken cut into bite size pieces (I used the leftovers from a roasted chicken we had the day before)
1 Can cream of potato soup (you can also use cream of chicken if you like)
3/4 can dry Vermouth (or dry white wine)
Garlic salt
Ground rosemary
Black pepper
EVOO


~ Saute' chicken in EVOO with garlic salt, rosemary, and pepper until warmed through.
~ Add soup and vermouth and heat thoroughly.
~ Let flavors combine while noodles are cooking (if you need more liquid, you can add chicken stock)
~ Once noodles are cooked, drain and combine all ingredients; serve with salad.

I'm sorry I forgot to take pictures, I wasn't even thinking about a post, I was just trying to figure out what to make for dinner. HaHa


This also received 6 out of 6 puppy tail wags :) ... It was also really good the next day.

We were so full from the excellent dinner that we only took a few and shared them. What really impressed me was the attention to detail that the chefs exhibited.

Thursday's Recipe Swap Meet ~ Slow Cook Pork Tenderloin

Slow Cook Pork Tenderloin

Rub mustard (I prefer spicy brown flavor) all over both pieces of tenderloin; then season with garlic salt, pepper, and crushed rosemary.







 

Brown both sides of each piece in a small amount of EVOO until crusty.













 
Transfer meat to bag lined crock pot (makes so much easier for clean-up) add 1/2 cup dry vermouth (dry white wine can also be used), add worcestershire sauce and teriyaki sauce to taste, 1 can of slice ripe olives with juice and sprinkle a  1/2 tsp. small bay leaves (or 3 large) on top. Add 1-2 cups chicken stock (can also use broth), then add water to cover meat.






Cover crock pot and cook on high for 6 hours, checking 1/2 way through to make sure liquid is covering meat. If not, add either chicken stock, water or a combo of both.








When done, serve with veggie and either noodles, rice or potatoes. The juice can be poured over the meat and the starch. The left over meat can be used for the following.....

BBQ Pulled Pork Sandwiches



Separate the pork with two forks until shredded then put into a medium sauce pan.  Add bottle of BBQ sauce (I love the Country Bob's) and some red wine and/or water to get your preferred consistancy.

When heated through, serve on your favorite bread or rolls.... that's a great way to get two meals out of one 2 lb. pork tenderloin.  Both these meals also got 6 out of 6 puppy tail wags.  :)
